Paleo Spiced Orange Plum Cake

Paleo Spiced Orange Plum Cake

 

Plums were on sale this week at our local grocery store. How can you say no to your local produce grocer giving you thumbs up, while selling you plums for .99 cents a pound? You can’t 😀

I love plums for their kick of tang, which I take up a notch with a bit of orange juice. This delicious cake is not overly sweet – in fact, if you are looking for a more traditional cake – I would add more sweetener of your choice.

This is a paleo recipe- which uses a combination of coconut flour and almond flour. I love coconut flour, but it is dry. That is why I’ve added in orange juice. It may seem like a lot of liquid at the bottom of the pan- but the coconut flour will soak it all up for a delicious and moist cake!

One of the most useful “gadgets” in my kitchen!

Equipment:

  • 9×13 cast iron baking pan
  • Grapefruit spoon (my second love!)
  • Mixing Bowl
  • Spatula
  • Whisk

Ingredients

  • 7-8 plums (for an 9×13 pan)
  • 1/2 cup coconut flour
  • 1/4 almond flour
  • 1 large ripe banana
  • 1/4 cup coconut sugar (or maple syrup or honey)
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon vanilla
  • 1 vanilla sea salt
  • 1 spoonful coconut oil
  • 1/4 cup orange juice


Instructions:

  1. Preheat the oven to 350 degrees.
  2. Quarter the plums, take out the pits using your handy grapefruit spoon
  3. Grease the bottom of your baking dish with the coconut oil.
  4. Lay the plum quarters so the skins are up. You should have enough to cover the bottom of the dish – if not, simply cut a couple more.
  5. Dust the tops of the plums with coconut sugar and sea salt. Pour the orange juice into the bottom of the pan-  enough to cover the bottom.
  6. Whisk together the eggs and sugar.
  7. Mash in the banana, then slowly add in the flours, vanilla, and spices. If your dough is too thick – add a splash of orange juice.
  8. Carefully spoon the batter over the plums. Use a spatula or spoon to smooth it out so it is evenly distributed. Your plums will poke through.
  9. Bake at 350 degrees for about 30 minutes. I ended with a broil for about a minute. Your crust should be a light golden brown, with a bit of dark brown crust.

 

Paleo Spiced Plum Cake

 

Serve with greek yogurt or coconut whip! This cake is not overly sweet at all- in fact, this would be an excellent breakfast dish or snack.

 

If you have leftover plums, make a plum syrup for waffles, pancakes or my Sweet Potato French Toast!
