Mint Chocolate Power Bars



  1. Soak the dates in warm water for twenty minutes (this makes them easier to blend!). in a blender, chop the almonds.
  2. You can grind them into a flour or leave some a bit chunky for texture.
  3. Pour the almonds into a bowl and add in the cacao powder.
  4. In a blender, blend the dates, mint and water until a paste forms.
  5. Scoop out the paste into the almond mixture and combine.
  6. Mix in the mini chocolate chips.
  7. Line an 8×4 pan with parchment paper. Pour the mixture into the pan and using another piece of parchment paper, press the mixture into the pan until even.
  8. Top with chopped almonds if desired.
  9. Place in the freezer for one hour to set.
