So, I did something I hate. I made one of those annoying recipes that leaves half an ingredient unused.
I really dislike recipes that use say, 2/3 can of some canned good that you will never use the other 1/3.
Tomato paste is one of the worst offenders. Just a tablespoon… well what do I do with a can 7/8 full of tomato paste!? I’ll just leave it in my fridge till it hardens, molds, and when I finally need tomato paste again (hooray!) it will be disgusting and I’ll have to open another (single serve) can.
So, I’m apologizing in advance. However, it’s just a bit of extra avocado, and if you are doing the keto diet, I’m certain you will eat the other half avocado at the next meal. So not too bad. 🙂
By the way, I’ve also started buying tomato paste in a tube!
I used Swerve for this mousse, but you can use your preferred granular erythritol sweetener of choice. I have to say, I certainly haven’t tried them all, but some of the top rated brands are:
This recipe is very forgiving, so depending on your own taste buds, you may want two full avocados… less sweetener.. more cacao, totally up to you! I topped mine with a couple of raspberries, you could top with walnuts, coconut, or Lily’s Dark Chocolate Chips (Keto compliant).
You could also double the recipe this is so good… you will have no problem finishing a double batch!Print
