Why am I so focused on grass-feed beef? For starters:

You can easily add any of your other favorite veggies to these skewers, mushrooms and zucchini would be an yummy addition!
Greek Grilled Beef Skewers
Prep your skewers by soaking them in water as you prepare the meat and veggies.
Next, prepare a cookie sheet or baking tray by lining it with unbleached parchment paper.
In a medium bowl, combine the cubed beef, minced garlic, thyme, parsley and the lemon pepper seasoning. Use enough oil to help everything stick together, approximately 1 1/2 – 2 Tablespoons.
Start threading the veggies and meat cubes in an alternate pattern on your skewers. I fit 7 cubes of beef per small kebab.
When all meat is threaded on the skewers, place the prepared kebabs on the prepared unbleached parchment paper tray.
Place under the broiler for 8-10 minutes until cooked through (minimum internal temperature of 145F).
If grilling, grill each kebab for 4 minutes on each side, turning once.
Serve with lemon “riced” cauliflower, and a simple side salad. The perfect way to get your grilling fix – any night of the week!

Ingredients
- 1lb grassfed beef, cubed
- 4 cloves garlic, minced or chopped
- 1/2 red onion, chopped in 1″ pieces
- 1 bell pepper, chopped in 1″ pieces
- 5 springs thyme
- 2 Tablespoons fresh parsley, chopped
- 1 Tablespoon organic lemon pepper seasoning
- 3-4 Tablespoons olive oil, as needed
- + 8 wooden skewers
Instructions
