Avocado Deviled Eggs, Paleo + Keto

Well, there is no easy way to say this, so, here goes. It is snowing. In April. Actually, it is a full-blown blizzard. In April.

Instead of a wearing a light jacket, (or no jacket), while running errands, doing spring clean-up, and maybe grabbing lunch (perhaps on a patio!?); we are hunkered down in our sweats and smartwool socks. This actually might be the most / worst snow storm we’ve had all year. I have to admit, the thundersnow last night was pretty cool 😀

On the bright side, it gives us a rare chance to just spend some time all together! It seems like this time of year we are normally running around trying to get ready for summer, so I have to say, it is almost refreshing to be sidelined inside for a bit.

So! Because I know it has to be summer eventually (I’ve kinda given up on spring at this point), and summer means get-together, picnics and barbecues, I thought it would be fun to try a (spicy) twist on a pot-luck staple.

A Note About Buying Paleo Mayo

We didn’t eat mayo for a loooooong time, because I couldn’t find any that had reasonable ingredients. Typical supermarket mayo is full of hydrogenated oils, which are a hard no for me.

Now there are quite a few brands that use only real food ingredients, like egg yolks and avocado oil!

There are three brands of Paleo-approved mayo that I can recommend: 

Primal Kitchen Avocado Oil Mayo and Primal Kitchen Chipotle Mayo

Hands down, the Chipotle Mayo by Primal Kitchen is my absolute favorite! We love the regular mayo as well, I much prefer the taste of it to the next two options.

Sir Kensingtons Avocado Oil Mayo

Pretty good! Be sure you grab the jar with the green lid- as Sir Kensingtons makes varieties of mayo with vegetable oil

Chosen Foods Avocado Oil Mayo

This one is a good option, although I don’t care for it quite as much as the other two. However, if you are a Costco member, you can get a huge jar for a steal, so it can be the least expensive option!

Hard Boiled Eggs in the Instant Pot

I know everyone has a “trick”to the perfect hardboiled egg. I do to, and mine is to make them in the Instant Pot! 😀

I’ve written the recipe to use the traditional method of hard-boiling eggs… but if you want a fool-proof, faster way to hard-boil (they peel like a DREAM), then check out:

Alright! Let’s devil some eggs:

 

Avocado Deviled Eggs

For a tasty twist on classic deviled eggs, give this slightly spicy version a try. The combination of avocado, red pepper flakes, and other spices add tons of extra flavor to an otherwise basic recipe.

Prefer more (or less) heat? Simply adjust the amount of crushed red pepper until you find the right balance.

Tip: Add white vinegar to the water when making hard-boiled eggs to make them easier to peel.

Ingredients:

    • Cook Time: 15 minutes
    • Total Time: 25 minutes

    Ingredients

    8 large eggs
    2 T. white vinegar
    2 medium avocados
    1 T. lemon juice
    1½ T. Primal Kitchen Avocado Oil Mayo
    1 t. crushed red pepper flakes
    ½ t. garlic powder
    ½ t. onion powder
    ½ t. smoked paprika
    Sea salt and black pepper, to taste
    3 T. fresh parsley, minced

    Instructions

    Directions:

    • Place eggs in a large pot and cover by an inch or two cold water. Add 2 tablespoons of white vinegar to the pot and bring to a rolling boil. Cover and turn off heat. Let the eggs sit on burner, covered, for 11-12 minutes.
    • Drain the eggs and rinse in cold water to stop cooking process. Once cool enough to handle, gently peel and slice each egg in half lengthwise.
    • Carefully remove the yolks with a spoon and transfer to a small mixing bowl. Set the cooked egg whites aside.
    • Add the avocado, lemon juice, avocado mayonnaise, red pepper flakes, garlic powder, onion powder, and smoked paprika to the bowl with the yolks. Season with salt and black pepper, to taste, and mash everything together until thoroughly combined.
    • Fill each egg half with a tablespoon of the avocado mixture and top with fresh parsley. Serve immediately and enjoy!

 

Although the Chipotle Mayo is too spicy for my little guy… I usually make a couple of these with it for the adults, because it is so so SO good!
